Whole Roasted Tilapia

Serves 2
Prep: 5 minutes
Cook: 20-30 minutes

1 whole tilapia
½ lemon, sliced
2 cloves garlic, sliced
4 sprigs rosemary 

Preheat oven to 350° F
1. Stuff tilapia cavity with lemon, garlic, and rosemary
2. Line a roasting pan with parchment paper
3. Place fish on a parchment
4. Bake for 20-30 minutes or until the thickest part flakes easily when tested with a knife

Fish Tacos

Serves: 2
Prep: 5 minutes
Cook: < 1 minute

Your favorite soft shell tortilla
Tilapia filet (cooked)
Edenworks Spicy Microgreens
Avocado, sliced
Onion (red or white)
Lime juice
Spicy mayo (50/50 mix of hot sauce and mayo)

*All quantities are to taste

1. Warm the soft shell tortilla for 10 seconds on each side in a hot skillet
2. Layer ingredients to taste


Chiu Chow Chili Noodles

Serves: 4
Prep: 10 minutes
Cook: 30 minutes

8 oz soba noodles (or preferred asian noodle)
1/2 cup chiu chow chili oil
2 tbsp black bean garlic sauce
1/2 cup rice vinegar
2 tbsp cup sesame oil
1/2 tbsp black pepper
4 oz Edenworks Spicy Microgreens

Optional toppings: sliced scallion, crushed peanuts, scrambled eggs, sautéed shrimp, boiled edamame

1. Follow cooking instructions for preparing soba noodles and place in a large glass bowl when cooked
2. Mix together chiu chow chili oil, black bean garlic sauce, rice vinegar, sesame oil, and black pepper.
3. Pour mixture over soba and mix until well incorporated
4. Mix in microgreens 

Summer Roll Salad

Serves: 1
Prep: 15 minutes

3 six inch round rice papers
1/2 cup boiled edemame
1 small cucumber, julienned
1 small bell pepper, julienned
3 small or 1 large radish, julienned
2 oz Edenworks Spicy / Mighty Microgreens 

1. Pour warm water into a large bowl or round baking pan
2. Dip rice paper in warm water for 15-20 seconds
3. Remove rice paper from water and place on flat work surface
4. Place 1/6 cup edemame, 1/3 cucumber, 1/3 bell pepper, 1/3 radish on the top third of the rice paper to form a row of ingredients
5. Wrap the top third of the rice paper around the edemame and veggies, snuggly
6. Tuck in side edges of rice paper
7. Continue wrapping until summer roll is formed
8. Perform steps 1-6 to make 2 more summer rolls
9. Cut each summer roll in half
10. Place summer rolls on a bed of microgreens
11. Dress with rice wine vinegar and tahini


Falafel Pita

Serves: 1
Prep: 7-12 minutes

Falafel balls
1 oz Edenworks Mighty Microgreens
Your favorite pickled vegetables
Israeli salad (Equal parts cucumber and tomato with a dressing of equal parts lemon juice and olive oil, topped with chopped parsley, salt, pepper to taste)

*All quantities are to taste

1. Warm falafel in the oven at 350° F for 5-10 minutes
2. Line the inside of your pita with humus and tahini
3. Add in microgreens, Israeli salad, pickled vegetables
4. Top with falafel and you can always drizzle on more tahini


Caprese Salad

Serves: 1
Prep: 7 minutes

2 oz Edenworks Mighty Microgreens
4 cherry tomatoes, sliced in half
3 small mozzarella balls
1/2 tbsp balsamic glaze
1/2 tbsp olive oil
Sea salt, to taste


Blackberry Walnut Salad

Serves: 1
Prep: 5 minutes

2 oz Edenworks Mighty Microgreens
1/3 cup blackberries (or any seasonal fruit)
1/4 cup walnut halves
1/4 cup pickled onion (these were pickled in white wine vinegar and beet juice)
Lemon and oil dressing (50/50 mix of lemon juice and olive oil)


Spicy Spaghetti with Garlic & Oil

Serves: 8
Prep: 10 minutes
Cook: 15 minutes

16 oz spaghetti, cooked al dente
1/4 cup reserved starchy water from making the spaghetti
1 large head of garlic, sliced
1/4 cup olive oil
1 tsp salt
4 oz Edenworks Spicy Microgreens

Optional: 16 oz anchovies packed in oil, finely chopped or ¼ cup parmesan cheese

1. Combine garlic, olive oil, and salt in a large skillet and warm over low heat, stirring occasionally until garlic softens and turns golden, about 8 minutes
2. Add pasta and reserved water to skillet and mix well
3. Transfer to large bowl and fold in microgreens


Sriracha Egg Sammie

Serves: 1
Prep: 10 minutes

1 english muffin
1 egg
1/2 oz Edenworks Mighty Microgreens
Hot sauce, to taste 

1. Cook an egg sunny side up
2. Split English Muffin open and layer microgreens, egg, hot sauce
